By now you should know I love quinoa. I don't only love it in savoury dishes though, I love it most at breakfast in place of porridge. When cooked in milk of any time it turns into a beautiful creamy dish with an almost nutty flavour (even more so if you use nut milks!). It's a gorgeous way to start the day.

Ingredients

120g quinoa
400ml alpro coconut milk
1tsp cinnamon
40g strawberries
2 figs
20g blueberries
20g blackberries

Method

1. Place the quinoa and coconut milk in a pan, place on a low heat and let the quinoa cook and absorb all the milk, once the quinoa has \"popped\" and all the milk has absorbed it is done.

2. Stir in the cinnamon and place the quinoa into bowls.

3. Chop the strawberrie into half and the figs into quarters, place these and the blueberries and blackberries on top of the quinoa and serve.
