Gluten Free Banana Pancakes

You can't get simpler than this, two ingredient pancakes, naturally gluten and dairy free. High protein and low cal, these pancakes are super quick and easy to make and can be topped with anything same as any other pancakes, keep them simply topped with honey or golden syrup and serve with fruit, or go all out and load them with Nutella or peanut butter!

1 medium banana
1 egg

Method

1. Mash the banana in a bowl then beat in the egg.

2. The mix in pretty thin so you need to be careful with it. Heat a frying pan and keep it on a low heat, the need to cook through slowly. Add a couple of tablespoonfuls of the mixture very slowly to the pan to create a small pancake, cook for 3-4 mins on one side, then flip the pancake over and cook for a further 3-4 mins. They are fragile so be careful when flipping!

3. Repeat with the rest of the mixture, you should get 4 pancakes out of the mixture. Serve however you like!
