Gluten Free Bacon with Butter Beans and Spinach

A few canned products, some left overs, throw it together and what do you have...well it could be anything really but in this case we got naturally gluten and dairy free bacon and butter beans in a sweet chilli sauce, super delicious and so very filling too!

Ingredients

2 rashers bacon
3 mushrooms
100g butter beans (canned)
100g sweetcorn (canned)
2tbsp sweet chilli sauce
50g spinach
  • Preparation Time: 5 Mins
  • Cooking Time: 10 Mins
  • This recipe makes 2 servings

Method

1. Cut the bacon rashers into strips and dry fry in a frying pan.

2. Slice the mushrooms, add to the bacon and continue to fry until the bacon is cooked through and the mushrooms have browned.

3. Add in canned butter beans (water drained off) and the sweetcorn, also add the sweet chilli sauce, stir and continue to fry for a couple of minutes until the beans are heated through

3. Place the spinach on two plates and top with the bacon and butter bean mixture.
