Tuna and Cheese Quiche - Coeliac Sanctuary

The easiest way of making a quiche gluten free is making it crustless, I generally prefer them without the pastry anyway! If you want to though you could put this in a pastry case...but we have done it without, making it naturally gluten free. A quiche makes a great lunch, especially when served with salad.

1 can tuna in brine or spring water
3 eggs, beaten
2 tbsp fat free cottage cheese
60g grated cheese/lactofree mature cheese
Handful mushrooms, sliced
Preparation Time: 5 Mins

1. Drain the can of tuna
2. Beat the cottage cheese into the eggs.
3. Add in the tuna and 3/4 of the cheese and mix well
4. Pour into a quiche dish
5. Sprinkle over the rest of the cheese and add some slices of mushroom to the top
6. Bake in the oven on gas mark 5 for 20-25 minutes until cooked through thoroughly and golden.
