Soya Rice Pudding

Rice pudding is naturally gluten free, but a lot of Coeliacs also struggle with lactose or dairy so here is a soya based rice pudding, it is a bit more runny than a normal rice pudding but still delicious! If you prefer you could switch soya milk for a different dairy free work, coconut milk works really well as does almond.

Ingredients

750ml light soya milk
4 tbsp sugar
1 tsp vanilla essence
300ml soya cream
125g dried pudding rice
1tsp nutmeg

  • Cooking Time: 3 Hours

Method

1. Place the pudding rice, milk, vanilla essence and sugar in an oven proof dish, mix well and put in oven for 2 to 3 hours on gas mark 1 until rice is cooked.

2. Remove from oven and allow to cool a little then stir in the cream and nutmeg.

3. Serve either hot or cold, although it is best served cold.
