Rice pudding is naturally gluten free, but a lot of Coeliacs also struggle with lactose or dairy so here is a soya based rice pudding, it is a bit more runny than a normal rice pudding but still delicious! If you prefer you could switch soya milk for a different dairy free work, coconut milk works really well as does almond.

4 tbsp sugar
1 tsp vanilla essence
300ml soya cream
125g dried pudding rice

1. Place the pudding rice, milk, vanilla essence and sugar in an oven proof dish, mix well and put in oven for 2 to 3 hours on gas mark 1 until rice is cooked.
2. Remove from oven and allow to cool a little then stir in the cream and nutmeg.
3. Serve either hot or cold, although it is best served cold.
Soya milk can be replaced with 900ml of semi skimmed milk (normal milk thickens more than soya),and the cream can be replaced with standard single cream if dairy free is not required
