Gluten Free Slow Cooked Pork in Apple Gravy

When you don't want to cook after a long day, the slow cooker is perfect as it cooks while your out and you just have to eat it when you get in. This naturally gluten free slow cooked pork recipe is divine, in a beautiful apple gravy you could have it as part of a Sunday Dinner, on a sandwich or just served with chips!

Ingredients

Pork
1.5tsp sage
1tsp parsley
zest of half a lemon
2 cloves of garlic
700g pork loin

Apple Gravy
150ml apple juice
100ml vegetable stock
1tbsp cornflour
  • Preparation Time: 15 Mins
  • Cooking Time: 5 Hours
  • This recipe makes 3 servings

Method

1. Mix together sage, parsley lemon zest and crushed garlic cloves in a bowl. You should get something that resembles a thick paste.

2. Spread the herb mix all over the pork and place in a slow cooker.

3. In a jug mix together the apple juice with veg stock and then pour over and around the pork. Place the lid on the slow cooker and cook for 4.5-5 hours on high.

4. When the time is up, remove the pork and slice (if it doesn't fall apart!), pour the apple juice, stock and any juices from the pork into a saucepan and place on a low heat. Add 1tbsp cornflour mixed with a drop of water to the liquid and stir until it thickens. Pour over the pork and serve.
