Stir frys are a staple if you need quick meal ideas, rice noodles especially vermicelli are a great replacement for egg noodles which are impossible to buy gluten free. This is a simple dish with a simple spring onion sauce but it makes a great fakeaway dish and a quick meal for a working weekday evening.

Ingredients

2 salmon fillets
2 spring onions
150g sugar snap peas
100g vermicelli rice noodles
120 oyster and spring onion sauce

Method

1. Cut the salmon fillets into chunks and fry in frying pan until cooked through.

2. Chop the spring onions and add to the frying pan along with the sugar snap peas, fry for a few minutes.

3. Meanwhile, soak the noodles in boiling water for a couple of minutes until the noodles are soft then add these to the frying pan.

4. Add the sauce to the pan and mix well, allow the sauce to heat through and then serve.
