1. Boil some water in a pan, crack in the egg and leave to poach for a a few minute.
2. In a fying pan, place the oil and the spinach, heat and stir until the spinach has wilted, this will take around a minute.
3. Place the wilted spinach on a plate and top with salmon slices. Once the egg has been in a few minutes the yolk should still be runny by the white cooked, removed from the water and place on top of the salmon, finish off with black pepper.
