These scones have more of the texture of drop scones, it is a very soft mix but still makes incredible scones, they are even better served with jam and cream! Don't expect to be able to make these like normal scones though, the mixture is a lot thinner and definitely not handleable, but they are delicious scones none the less.

Rice pudding is naturally gluten free, but a lot of Coeliacs also struggle with lactose or dairy so here is a soya based rice pudding, it is a bit more runny than a normal rice pudding but still delicious! If you prefer you could switch soya milk for a different dairy free work, coconut milk works really well as does almond.

These cookie type biscuits are gluten free and dairy free, deliciously light and very soft they almost have the texture of cake not a crispy biscuit but they are amazing moreish all the same. They have an almost buttery taste and texture with the crisp crunch of coconut thrown in. They won't be in the biscuit tin for long!

There are some hints and tips needed to perfect shortcrust pastry the gluten free way, using an egg yolk helps your pastry stay firm but not so hard you can't eat it, and always chill it before use! Xanthan gum is used in the recipe to help the pastry bind but you can skip it if necessary, the pastry may be a bit more crumbly though.
