These no bake gluten free peanut butter bars are a quick and easy treat that’s perfect for anyone with coeliac disease or following a gluten free lifestyle. The crunchy base combines peanut butter, maple syrup, almonds, and coconut, all topped with a smooth layer of rich chocolate. Naturally gluten free and completely no bake, they’re ideal as a snack, dessert, or lunchbox sweet treat. Naturally Gluten Free No Bake Choc Peanut Butter Bars

Ingredients

500g crunchy peanut butter
175g ground almonds
60g desiccated coconut
100ml maple syrup
150g dark chocolate (I use Bourneville or M&S Swiss Chocolate)

Method

1. In a large bowl, mix together the peanut butter, ground almonds, coconut and maple syrup together until you get a stiff dough. Press the dough into a square baking tin (approx. 8 inch) lined with greaseproof. Set aside.

2. Melt the chocolate and spread over the top of the peanut butter dough.

3. Refrigerate for at least a couple of hours then cut into pieces, I cut into 16 but you could cut into 25 if you like.

This recipe can easily made vegan and dairy free as well as being naturally gluten free, all you'd need to change is the chocolate to a dairy free version.
