Gluten Free Melting Moments

A favourite of my other half that he makes frequently and has done for years, they are deliciously crumbly and coated in desiccated coconut. He adapted this recipe from a popular family one so I could have them gluten free. A really easy melt in the mouth biscuit to make that really does melt in the mouth when you bite into the them.

Ingredients

210g dairy free spread
150g sugar
1 egg
1.5tsp vanilla extract
280g gluten free plain flour flour
20g gluten free baking powder
40g desiccated coconut
  • Preparation Time: 10 Mins
  • Cooking Time: 15 Mins
  • This recipe makes 24 biscuits

Method

1. Cream the butter and sugar together until smooth

2. Beat in the egg and vanilla until creamy.

2. Gradually add the flour and baking powder and mix well.

4. Break off walnut sized balls and roll in your hands, repeat until all the dough is used.

5. Roll each ball in the coconut then place on a baking tray and flatten down with your hand, places them an inch or two apart as they will spread.

7. Bake in the oven for about 15 minutes on gas mark 4 until golden.
