Gluten Free Teff Waffles - Coeliac Sanctuary

Teff is a naturally gluten free ancient grain which is popular in African cultures. For this recipe we used Tobia Teff White Flour to make amazing waffles. The waffles are very light and soft and are perfect paired with honey, maple syrup and berries. Teff has a delicately nutty flavour which give the waffles an amazing flavour, adding just a touch of cinnamon really enhances this so make sure to add that in!

Gluten Free Teff Waffles

Ingredients

100g Tobia Teff White Teff Flour
1tsp baking powder
1/2tsp cinnamon
2tbsp sugar
1 egg
1/2tbsp oil
125ml milk
50g natural yogurt (both full fat or fat free work)
Waffle Maker

Preparation Time: 5 Mins
Cooking Time: 5 Mins

Method

1. Bring waffle maker up to temperature, meanwhile, combine all dry ingredients in a bowl.

2. Beat the egg, oil, milk and yogurt into the dry ingredients.

3. Once the waffle maker is at temperature pour the batter in, it does puff up so make sure not to overfill. Our waffle maker has 2 big square waffle plates and this mix will make two of this size waffles, we filled almost to the top of the bottom hot plate.

4. Close the waffle maker and leave for about 4-5 mins. Open up and the waffle should be browned, if not, close and leave for another minute.

5. Serve warm and top with your favourite toppings, we went for blueberries and honey!
