Easy peasy gluten free sausage and bean one pot dish, cooked on the hob. A great simple evening meal for a busy day! It is a great one for all the family to enjoy too. It is also dairy free and can easily be made vegetarian by switching to meat free sausages too. I use cumberland sausages for this dish as they are a bit more flavoursome but feel free to use whichever gluten free sausages you prefer.

Gluten Free Sausage and Bean One Pot

Ingredients

4 gluten free sausages (I use gluten free cumberland sausages)
1 carrot
1/2 onion
100ml vegetable stock
1 large can baked beans (I use heinz purely out of preference!)
1/2tbsp tomato puree
1tbsp paprika
1/2tsp mixed herbs
1 bay leaf

Preparation Time: 5 Mins
Cooking Time: 35 Mins

Method

1. Chop the carrot and onion into small chunks and set aside.

2. Brown the sausages in a large pan, remove and then leave to one side. Throw the carrots and onion into the pan and cover in stock, cook for 10 mins until the veg starts to soften.

3. Once your carrot and onion have started to soften, add the baked beans, tomato puree, spices and herbs to the pan along with the sausages. Cook on a low heat for 15-20 minutes until sausages cooked through, stirring occasionally.

4. Remove the bay leaf and serve!
