This gluten free smoked salmon pasta is a quick, creamy meal that feels a little bit special without any extra effort. Made with soft Philadelphia cream cheese, fresh spinach and a hit of lemon zest, it’s light, comforting and full of flavour. Perfect for an easy gluten free midweek dinner or a simple Coeliac friendly lunch, this recipe comes together fast and works just as well served warm or cold.

Gluten Free Lemon and Smoked Salmon Pasta

Ingredients

100g gluten free pasta (any type)
50g fresh spinach
Juice and zest of half a lemon
100g Philadelphia cream cheese
1tsp garlic granules
1tsp onion granules
200g smoked salmon

Method

1. Cook the gluten free pasta as per the packet instructions, I prefer to cook gluten free pasta al dente so it doesn't fall apart.

2. Once cooked, drain the water and add in the spinach and wilt over the heat.

3. Mix all other ingredients except smoked salmon together in a bowl and then add to pasta stir through while still on the heat so the Philadelphia loosens up.

4. Chop the smoked salmon and add to the pasta off the heat, or, if serving the dish cold, stir through once the rest is cold.
