Easy homemade gluten free double chocolate chip cookies with a rich chocolate dough and plenty of chocolate chips. These chewy chocolate cookies are simple to make and perfect with a cup of tea.

Gluten Free Double Chocolate Chip Cookies

Ingredients

50g unsalted butter
1tbsp golden syrup
75g caster sugar
150g gluten free self raising
25g cocoa powder
1 large egg
100g chocolate chips

Method

1. Place the butter in a saucepan and put on a low heat until just melted.

2. Add caster sugar and golden syrup to the pan until all combined and butter and sugar are fully melted.

3. Leave the butter mix to cool, it can still be warm to touch but we don't want it too hot as it will cook the egg.

4. While the egg is cooling, mix the gluten free self raising flour and cocoa powder together in a bowl, to get the best result, sieve it so you don't get flour lumps.

5. Once the butter has cooled sufficiently add both that and the egg to the gluten free flour and cocoa powder, use a wooden spoon to bring it all together into a dough. Throw in the chocolate chips and give it another good mix to stir them all through.

6. Take walnut size pieces of the gluten free cookie dough and press them onto a baking tray lined with parchment. You can get about 6 on a standard tray as spread slightly so need to be a good couple of inches apart.

7. Place them in an oven preheated to gas mark 4/180c and baked your gluten free cookies for 20-25 mins. Allow to cool on the tray before serving.
