This delicious gluten free overnight oats recipe has a smooth, batter like base for a creamier texture, making it a great option if you find most gluten free oats too coarse like me. Finished with rich dark chocolate, it creates a simple but indulgent breakfast. These make ahead oats set overnight in the fridge and keep well for a couple of days, making them ideal for busy mornings or to take to the office. Naturally gluten free, filling, and easy to prepare, this is a go to gluten free breakfast recipe for any coeliac who can tolerate gluten free oats.

Gluten Free Bounty Inspired Overnight Oats

Ingredients

40g gluten free oats
2tsp cocoa powder
1tsp chia seeds
10g desiccated coconut (plus a sprinkle for the top)
2tbsp maple syrup
75g Greek yogurt
75ml milk
10g dark chocolate

Method

1. Mix all ingredients except for the dark chocolate together and blend with an emersion blender until fairly smooth, almost like a batter. Alternatively, you can mix well for a chunkier overnight oats, I find most gluten free oats to chunky though and much prefer these overnights finer.

2. Pour the mix in a mason jar and chill for 30 mins or so slightly firm on the top.

3. Place the chocolate in a bowl and melt in the microwave, it will only take a few seconds. Dark chocolate works well because of the richness but you can really use any chocolate you like as long as it is gluten free, I went for Lindt 70%. Spread the melted chocolate on the top of your over night oats and sprinkle over a little extra coconut.

4. Cover with either the lid or cling film and return the jar to the fridge and leave overnight to thicken. I will last in the fridge for a couple of days.

NB: If you can't tolerate gluten free oats, millet or buckwheat flakes should work in a similar way.
