Gluten Free Coronation Chicken Pasta

If you like your dishes with a bit more spice this dish many be for you. Made with gluten free pasta, chicken and some simple items to make a delicious coronation chicken sauce, this recipe is great for lunch and can be eaten cold which makes it even better if you want it for work. Underneath add a bed of salad too, load it with whatever you like!

Ingredients

250g gluten free pasta
250g cooked chicken pieces
25g sultanas
1tbsp mayonnaise
2.5tbsp natural yogurt
Pinch black pepper
2tsp mild curry powder
1tsp coriander leaf
2tbsp mango chutney
15g flaked almonds
  • Preparation Time: 5 Mins
  • Cooking Time: 20 Mins
  • This recipe makes 3 Servings

Method

1. Cook the gluten free pasta in boiling water until al dente (about 5-8 mins), remove from the heat and drain.

2. While the pasta is cooking, in a bowl mix together the sultanas, mayonnaise, natural yogurt, pepper, curry powder, coriander leaf and mango chutney, mix well to combine.

3. Place the pasta in a bowl along with the cooked chicken pieces (you can either have the pieces cold or hot, whichever you prefer).

4. Pour the curried mayonnaise sauce into the pasta and chicken and stir to evenly coat the gluten free pasta and chicken.

4. Place salad items of you choice in the bottom of serving dishes and load the pasta on the top, scatter over flaked almonds then serve!
