Cod and Prawn Crustless Quiche - Coeliac Sanctuary

This fishy quiche is high in protein and it is naturally gluten free as we have made it crustless but you could put it in a pastry crust if you wish too, we prefer this one without pastry though, the flavour of pastry can take away from the fishy flavours. Great for lunches, especially with a salad.

1. Boil the cod in a pan for 10 mins in the rice milk.
2. Meanwhile, beat the philadelphia with the egg.
3. Crumble the cod over the bottom of a quiche dish add the prawns, pour over the philadelphia mix and bake in the oven for 15-20 mins until golden.
You could replace the cod with any other white fish in this recipe, or salmon would work well too.
