Gluten Free Chicken Tikka Masala

I love a good curry and chicken tikka masala is one of the easiest ones you can make, packed with so many delicious spices it is a great curry to make midweek, served with some rice you have an amazing flavour filled meal which is naturally gluten and dairy free.

Ingredients

3 chicken breast fillets
2 onions
50ml water
2tsp fresh ginger
4tsp turmeric
2tsp garam masala
2tsp ground coriander
2tsp ground cumin
1tsp paprika
1tsp mild chilli powder
5 large tomatoes
200ml coconut milk
1 red pepper

Method

1. Cut the chicken into chunks and fry over a medium heat for 5-6 minutes then set aside.

2. Chop the onion and fry for a few minutes in a frying pan, add the water and spices, mix and fry for a further 3-4 minutes.

3. Add the chopped tomatoes and simmer until tomatoes are soft then place this base mix for the sauce in a blender and blend until fairly smooth, return to pan and stir in the coconut milk.

4. Add chopped red pepper to the sauce and add the chicken back in. Simmer for 4-5 mins then serve with rice.
