2tsp fresh ginger
2tsp garam masala
2tsp ground coriander
2tsp ground cumin
1tsp mild chilli powder
5 large tomatoes
200ml coconut milk

1. Cut the chicken into chunks and fry over a medium heat for 5-6 minutes then set aside.
2. Chop the onion and fry for a few minutes in a frying pan, add the water and spices, mix and fry for a further 3-4 minutes.
3. Add the chopped tomatoes and simmer until tomatoes are soft then place this base mix for the sauce in a blender and blend until fairly smooth, return to pan and stir in the coconut milk.
4. Add chopped red pepper to the sauce and add the chicken back in. Simmer for 4-5 mins then serve with rice.This recipe was first seen in our 2018 calendar
