Ingredients

150g icing sugar
White of a medium egg
4 Schar brioche rolls
100ml double cream
Food colouring (optional)
Jam (optional)
  • Preparation Time: 5 Mins
  • Cooking Time: 5 Mins
  • This recipe makes 4 iced buns

Method

1. Whisk the egg white until foamy and then fold in the icing sugar until all combined.

2. Spread the icing over the top of the brioche rolls and allow to solidify. If you like reserve a little icing and add some food colouring, drizzle over to add a little pattern and colour to the buns.

3. You can skip the cream if you like and just eat them iced, however if you want to add something extra for a great treat a little cream does the job. Once the icing has firmed up, cut down the centre of each roll and split open.

4. Whisk the double cream until very thick, if you like add a little jam or lemon curd to the bun (optional) and spread a spoonful of the cream down the centre of each bun.
