Cheat's Iced Buns

Cheats iced buns have to the the best thing ever. No need to make brioche rolls, just use Schar ones, fill with jam, cream or both and top with sticky icing and you have the best quick sweet treat. They are great to give the kids when they are whining or if you want something quick to make.

1. Whisk the egg white until foamy and then fold in the icing sugar until all combined.

2. Spread the icing over the top of the brioche rolls and allow to solidify.

3. You can skip the cream if you like and just eat them iced, however if you want to add something extra for a great treat a little cream does the job. Once the icing has firmed up, cut down the centre of each roll and split open.

4. Whisk the double cream until thick, if you like add a little jam or lemon curd to the bun (optional) and spread a spoonful of the cream down the centre of each bun.

We haven't done it with Dairy Free cream which it why we have marked the recipe as not being dairy free, however you could use something like Alpro soya cream in place if you wanted to make they dairy free.
