Gluten Free Bacon and Maple Crepes

Gluten free crepe style pancakes are super easy to make, add some maple syrup or honey and some bacon and you have an almost American classic. Fabulous for the weekends. You can top pancakes with absolutely anything and bacon and maple syrup work surprisingly well together, despite being a mash of sweet and savoury.

Ingredients

6 rashers bacon
3 tsp maple syrup (or honey)
75g gluten free plain flour
Pinch salt
150ml milk
1 egg
  • Preparation Time: 10 Mins
  • Cooking Time: 10 Mins
  • This recipe makes 3 serving

Method

1. Grill or fry the bacon.

2. Beat egg with the milk in a jug then add the flour and whisk well, leave to sit for 10-15 mins

3. Spray a frying pan with frylight/oil, add 1/3 the mix, leave for a minute or 2 and flip over (the hotter the frying pan the easier it is to flip).

4 Create the other two pancakes with the remaining mix.

5. Place bacon in a crepe, roll and drizzle over the maple syrup.
